Watermelon and Arugula Salad with Feta Cheese

Wine makers also make good cooks.  And wine makers have lots of reasons to get together year round, from the crush to the press to blending sessions and bottling parties.  Then there’s grape sourcing outings and wine tasting road trips.  A wine maker’s job is seldom done.

I often help a bunch of guys make wine.  Maybe it’s not so much the physical work but I’m there with lots of support and my kitchen experiments.  We potluck and Tom, one of the bunch, brings the healthiest dishes.  His Watermelon and Arugula Salad with Feta Cheese is a crowd favorite.

Showy and simple, this watermelon and arugula salad with feta cheese is not only a contrast of bright colors but it is also an unlikely marriage of flavors and textures. Sweetness from the watermelon,  bright fennel-licorice flavor from the arugula, and the saltiness of feta cheese all meld together in addicting harmony. No dressing or seasonings required –  the flavors from each ingredient don’t need nudging to show off their clean tastes.

Recipe: Watermelon and Arugula Salad with Feta Cheese

Ingredients

  • Red watermelon
  • Baby arugula leaves
  • Feta Cheese, crumbled

Instructions

Cut watermelon into smll cubes, smaller than one inch squares.

Clean arugula leaves and spin dry.

Right before serving, placed watermelon into serving bowl, add arugula and gently toss. Sprinkle on feta cheese and lightly toss. The watermelon will release juices to make the “dressing”.

Proportions are at the discretion of the cook.
