Vietnamese Spicy Peanut SauceA little spicy, a little sweet, this easy and versatile peanut sauce is delicious on Vietnamese spring rolls or as a dip for crudités.  Have leftover plain spaghetti? Pour some Spicy Peanut Sauce over it, warm in the microwave and garnish with chopped green onions.

Recipe: Spicy Peanut Sauce

Sauce may be made up to 3 days in advance; cover and keep refrigerated.  Thin with 1-2 tablespoons of hot water if necessary.

  • 1 Tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1/8 teaspoon red chili pepper flakes
  • 1 Tablespoon garlic hot sauce
  • 3-4 Tablespoons creamy peanut butter
  • 3 Tablespoons hoisin sauce
  • 3/4 teaspoon granulated sugar
  • 3/4 cup water

In a small saucepan, heat oil on moderate heat, add minced garlic and pepper flakes. Sauté until garlic is turning golden. Add remaining ingredients, whisk together and bring mixture to a boil. Simmer sauce until thickened, about 1 minute.

Makes about 1 cup.
