Beef BaltiIs one of your new year resolutions to eat healthier?

Will your meals look the same day after day?  Green salads, lots of them?  Some with a teeny bit of dressing and cut chicken laying across the top?  Maybe you’ll treat yourself and add few strands of aged cheese or thin ribbons of carrot.

Sounds like your your taste buds might fall asleep watching the next green pile getting pushed in front of them.  If that’s happening, time to change the game.

This version of Beef Balti is a quick stir-fry dish made with lean beef and vegetables.  The surprise is in the aromatic seasonings – fresh garlic and ginger, and garam masala.  The light sauce comes from the ingredients’ natural juices.  Enjoy with another vegetable, or temporarily veer off the beaten path and wrap pieces in a warm roti or serve over steamed rice.

This dish can also be made with other proteins including chicken, pork or tofu.  Cut the protein into small pieces before cooking.

Ingredients

  • 8 ounces lean beef steak (choose a tender cut; flank steak works well)
  • salt and ground black pepper
  • 1 small yellow or white onion
  • 3 mushrooms, white or crimini
  • 1-2 Roma tomatoes
  • 2 Tablespoons vegetable oil
  • 1 Tablespoon finely minced fresh ginger
